Blogmas day 6 : Mince pie recipe

Mince pie recipe
For me mince pies are a real statement for Christmas and I always make them. Here is my tried and over tested recipe.

Ingredients
375grams of  plain flour
250grams od softened butter
125grams of caster sugar
1 egg
800grams of mince meat
2 oranges peeled
1 apple finely diced

Method
1.First preheat a oven to 200C/400F/Gas 6.
2.Then to make the pastry rub the four, butter, sugar and egg together with a splash of cold water, until it becomes a dough.
3.Now wrap the pastry in cling film and put in the fridge.
4.To make the filling, turn the mincemeat out into a bowl, grate the zest of the tangerines into the mincemeat, then peel and chop the fruit.
5. Roll out the pastry to a 3mm/1/8in thickness.
6.With a round pastry cutter, cut out 6 x 9cm/3½in discs of pastry.
7. Press the pastry into the muffin cups and fill each one with a good helping of the mincemeat mixture, so that it reaches three-quarters of the way up the side of the pastry-lined cup.
8.Put the tangerine and apple pieces into the bowl and blend by hand.
9.With a fluted pastry cutter , cut out the pastry  , make sure they are a little bit bigger then the case.
10.Then press the pastry in the tins and then spoon a teaspoon of mince meat into each.
11.If you have any extra pastry make a lid.
12.Then sprinkle with sugar .
13.Bake for 20 minutes then transfer to a rack to allow the pies to cool.
14.Dust wit icing sugar and then eat.
